Soup: Broccoli Cheddar Bacon
1 lb bacon - chopped into chunks
-------- Cook bacon in bottom of pot until done
-------- Pour off some bacon fat (optional)
12 oz of fresh or frozen broccoli
-------- Par-cook broccoli in microwave, then chop small or leave as large florets
-------- Add to soup
All the broccoli
-2- cups water
-1- 398ml can evapoarated milk or half and half
-1- green onion chopped or cut with kitchen shears
1/2 tsp salt
-------- Add to soup (optional)
1/4 tsp black pepper
1/2 teaspoon smoked or regular paprika
pinch cayenne pepper (doesn't make soup spicy - enhances flavor)
-------- Bring to boil
-------- Turn down to Medium/Low
-2- cups grated cheddar cheese
-------- Add 2 cups grated cheese one handful at a time
-------- Stir to melt the cheese into the soup after each handful
Optional: (I don't do this)
To thicken more, whisk 1 tbsp cornstarch into cold water or broth until the cornstarch is dissolved, and stir that into the soup.
Without the cornstarch the fat will separate in the fridge, making the soup look lumpy, until its warmed up, and then it looks just fine.
