Soup: Holiday Dinner ~ Cranberry, Yam
500g ground turkey or chicken
-------- Put turkey/chicken in large pot with 1 inch, 2cm small water
-------- Break apart, stir and boil until cooked through
1 bunch celery chopped (use half to 3/4 bunch if not a celery fan)
500g (1/2 lb) yams peeled and diced
340g bag frozen, thawed, or dried cranberries. Or half a 600g bag. They get lighter as they dry out in the freezer, so go by bag size. I only use sweetened Crazines now. Not regular cranberries
1 green onion chopped (just the green, not the all white parts)
1 tsp rosemary
1 tsp thyme
1 1/2 tsp salt
1 1/2 tsp sugar (optional, but helps offset the tang of the cranberries)
(optional) 1/4 to 1/2 tsp ground black pepper
-------- Add above items to pot
-------- Stir
-------- Bring to boil
-------- Turn down to medium-low and cover with lid
-------- Simmer until vegetables are soft
-------- Serve - add more salt and/or pepper to taste
| Title | Recipe: Soup: Holiday Dinner |
| About | I wanted a soup that would bring the flavours of a holiday "Turkey" dinner without having to make an entire holiday dinner. I try to keep the number of ingredients low, so feel free to add other vegetables to match your own holiday meal, eg. chopped mini carrots, potatoes. |
